At 3 to 4 years old, these ‘mouton’ have had a charmed life, eating lowland herb and wildflower meadows, giving time enough to develop a complex and pleasing taste. We’ve then taken the maturing stage to the next level, dry-ageing the meat for 15 days – unprecedented in this era of speed and turnover.
You wont find anything like this in the shops, even the most salubrious of butchers – if such a place exists. The only place to get your hands on it is right here, and as a sweetener, if you order during June or July you’ll receive a complimentary bottle of Chateauneuf-du-Pape worth £20, on us.
The £90 package contains 2 shoulder joints, neck fillet, rack, loin chops, rump, 2 leg joints, leg steaks, shank and breast (or mince), plus a great 2018 red. Local delivery is included, nationwide is added at cost.
